Amy's Aunt Rentia, who teaches yoga, often cooks black beans, quinoa and vegetables starting "from scratch" - soaking the beans overnight, simmering them for hours in a crock pot, then chopping and steaming vegetables and cooking quinoa. Our family has enjoyed many a dinner at her home, marveling at how such simple food could be so tasty. We decided to create a similar meal for our customers to enjoy, without all the work. Amy's Quinoa and Black Bean bowl is easy to prepare, high in fiber, low in fat and calories, gluten free and non dairy.
